Slow-Fashioned Potpie with Biscuit Crust

 

Ugly colors but YUMMY! The crock pot rules again! Not to much to say but the potpie wasvery good but the colors could have used some spicing up.  We substituted Sunchokes for the potatoes and halved the chickpeas and put in fake chicken instead (its a vegetarian crockpot cookbook). 

The other important thing to come out of this recipe is possibly a drop biscuit recipe to rival Bisquick.  Perhaps Bisquick’s life with me will be reduced by one more recipe only leaving: shortcake.  Oh Bisquick why!!!!

The leftovers will be amazing….

LEFTOVER UPDATE: They were gone in a flash and we sort of had a bit of stare off to see who got the last serving. Really it was more like bartering for the last bite. Ok so it was more like she asked and I said ok without any further ado. But I was a bit sad on the inside. So there.
