Crispy Corn Waffles, Smoothies, and Microwave Bacon

 

The amazing bread cookbook strikes again! Instead of the “Grandpa’s Favorite Waffles” recipes we went Iowian and did the Crispy Corn Waffles instead.  Generalized they were like corn bread waffles.  But is that bad? NO! They were pretty amazing.  I added some warmed frozen corn kernels across them for texture and served them with a pad of butter and Grade B Maple Syrup.  3 out of 3 people were really happy with them.

As for the smoothies they were just a random assortment of frozen berries/fruits and some fruit juice thrown into the Magic Bullet.  They get the same thumbs up as always with their ever changing landscape of frozen fruit I find in my freezer.

The bacon on the other hand is this weird pre-wrapped, raw, ready to cook in the microwave kind that accidentally got bought when we were looking for the weird precooked kind.   But its really just prepackaged bacon on a paper towel in a zip lock bag. No different than cooking bacon in the microwave any other way. In the end it tastes pretty good but the packaging is overkill!
